Si no es as\u00ed, recorte los trozos que est\u00e9n sucios. Si su filete tiene la cadena adherida y no quiere servirlo, c\u00f3rtela y gu\u00e1rdela para otro fin.<\/li>\n\n\n\n<li>Deje que los filetes se pongan a temperatura ambiente durante al menos 30 minutos y hasta 90 minutos, dependiendo del grosor de los filetes. Justo antes de prepararse para cocinar, seque la carne con toallas de papel y luego \u00fantela con aceite. Salar bien.<\/li>\n\n\n\n<li>Caliente 2 cucharadas de aceite en una sart\u00e9n de hierro fundido a fuego alto durante 1 minuto. Remover para cubrir la sart\u00e9n. Ponga los filetes en la sart\u00e9n caliente e inmediatamente baje el fuego a medio o medio alto (dependiendo de su cocina, medio en una gama de gas de alto BTU es aproximadamente medio alto en la mayor\u00eda de las gamas el\u00e9ctricas). Tambi\u00e9n puede utilizar un term\u00f3metro de carne insertado en la parte m\u00e1s gruesa del bistec ( 50 \u00b0C a 55 \u00b0C para m\u00e9dium rare, 60 \u00b0C a 65 \u00b0C para m\u00e9dium well, 70 \u00b0C \u00b0F a 75 \u00b0C para well done).<\/li>\n\n\n\n<li>Saque la carne de la sart\u00e9n, c\u00fabrala con papel de aluminio y d\u00e9jela reposar mientras prepara la salsa.<\/li>\n\n\n\n<li>Vierta el vino en la sart\u00e9n y ponga el fuego al m\u00e1ximo. H\u00e1galo hervir furiosamente hasta que se reduzca en 3\/4 partes, unos 10 minutos. A\u00f1ade los jugos que hayan soltado los filetes durante el reposo.<\/li>\n\n\n\n<li>Apagar el fuego y esperar a que el vino deje de burbujear. Cuando haya dejado de burbujear, a\u00f1ada las cucharadas de mantequilla, una cucharada cada vez. Incorpore cada cucharada a la salsa hasta que se incorpore por completo antes de a\u00f1adir la siguiente cucharada de mantequilla.<\/li>\n\n\n\n<li>A\u00f1adir sal al gusto y servir la salsa con el filete.
